Vegetable Soup

It’s like a party in a pot!

What’s better than soup on a cold day in winter? Sometimes, I come home late from work and when it’s cold outside I am not sure what to cook for my family to warm them up. I usually open the fridge to look at what I have that I can throw together into a warm meal. Luckily, I always have vegetables in my fridge and my family loves their veggies. I start by taking out all kind of vegetables I have and place them on the counter. I’m always excited at the healthy assortment of colors that sit in front of me. I have squash (light green), carrots (orange), cabbage (purple), celery (green), potatoes (yellow), tomatoes (red), and basil (green). I ask myself what I can do with all these colorful ingredients? I found it! Vegetable soup. Deliciously healthy vegetable soup.

Vegetable Soup

Ingredients
  1. Broccoli
  2. Purple cabbage
  3. Celery
  4. Mexican squash
  5. Tomatoes
  6. Potatoes
  7. Basil
  8. Carrots
  9. Onion
  10. 1 tbsp tomato paste
  11. 1tbsp salt
  12. ½ tsb black pepper
  13. ¼ tsb garlic
  14. 1/8 tsb turmeric
  15. 1 tsb cardamom
  16. ½ tsb 7 spices
  17. ½ cup fresh lemon juice
  18. 1 tbsp coconut oil
Instructions
  1. Wash the vegetables
  2. Peel the potatoes and wash them
  3. Chop the vegetables
  4. Heat the oil and add the chopped onion
  5. Sauté the onion
  6. Add the chopped vegetables
  7. Add all the spices
  8. Sauté the vegetables
  9. Add water, enough to cover a little over the top of the vegetables
  10. Add tomato paste
  11. Stir the vegetables and leave until cooked
  12. Add lemon juice
  13. Add basil leaves
Notes
  1. Serve with crackers or flax seeds
  2. [Flax seeds are full of omega 3 and 6, and are full of fiber]
