It’s like a party in a pot!
What’s better than soup on a cold day in winter? Sometimes, I come home late from work and when it’s cold outside I am not sure what to cook for my family to warm them up. I usually open the fridge to look at what I have that I can throw together into a warm meal. Luckily, I always have vegetables in my fridge and my family loves their veggies. I start by taking out all kind of vegetables I have and place them on the counter. I’m always excited at the healthy assortment of colors that sit in front of me. I have squash (light green), carrots (orange), cabbage (purple), celery (green), potatoes (yellow), tomatoes (red), and basil (green). I ask myself what I can do with all these colorful ingredients? I found it! Vegetable soup. Deliciously healthy vegetable soup.

The colorful ingredients
My 7 spices recipe can be found here.
- Broccoli
- Purple cabbage
- Celery
- Mexican squash
- Tomatoes
- Potatoes
- Basil
- Carrots
- Onion
- 1 tbsp tomato paste
- 1tbsp salt
- ½ tsb black pepper
- ¼ tsb garlic
- 1/8 tsb turmeric
- 1 tsb cardamom
- ½ tsb 7 spices
- ½ cup fresh lemon juice
- 1 tbsp coconut oil
- Wash the vegetables
- Peel the potatoes and wash them
- Chop the vegetables
- Heat the oil and add the chopped onion
- Sauté the onion
- Add the chopped vegetables
- Add all the spices
- Sauté the vegetables
- Add water, enough to cover a little over the top of the vegetables
- Add tomato paste
- Stir the vegetables and leave until cooked
- Add lemon juice
- Add basil leaves
- Serve with crackers or flax seeds
