A scrumptious coconut fix for your sweet cravings
Coconut is a family favorite for dessert in my house. My daughter and I were craving something sweet, a dessert that we would all love. I looked inside the pantry searching for ingredients to make a quick desert. I found flour and coconut. That’s all I needed to spark a new recipe. I decided to make coconut cake.
Vegan Coconut Cake

A scrumptious coconut fix for your sweet cravings
Cake
- 2 cups flour
- 1 cup shredded coconut
- 1 cup sugar
- 1 cup almond milk*
- ¾ cup corn oil
- 1 tsb vanilla
- 1 tsb baking powder
- 2 Ener-G-egg replacers**
Syrup
- 2 cups sugar
- 1 cup water
- 1 tsb lemon juice
Syrup preparation
- Prepare the syrup before the cake
- Place the sugar and water in a saucepan over the stove
- Stir over heat until sugar dissolves
- After the mixture boils, add lemon juice
- Boil for two minutes and remove from heat
Cake preparation
- With a stand mixer, whisk oil with sugar
- Add milk, egg replacer, vanilla
- Add flour, baking powder, and shredded coconut gradually incorporating them
- Coat a pan with oil and sprinkle with flour
- Pour cake in pan
- Turn oven on 350º
- Bake for 25-30 minutes
- Remove from oven
- Using a toothpick, poke holes in the cake and then pour the syrup
- Sprinkle shredded coconut on top of cake
- Leave it to cool and then enjoy!
Notes
- *You can use your own preference for milk
- **Two eggs can be used instead of the egg replacer
