Vegan Coconut Cake

A scrumptious coconut fix for your sweet cravings

Coconut is a family favorite for dessert in my house. My daughter and I were craving something sweet, a dessert that we would all love. I looked inside the pantry searching for ingredients to make a quick desert. I found flour and coconut. That’s all I needed to spark a new recipe. I decided to make coconut cake.

Cake
  1. 2 cups flour
  2. 1 cup shredded coconut
  3. 1 cup sugar
  4. 1 cup almond milk*
  5. ¾ cup corn oil
  6. 1 tsb vanilla
  7. 1 tsb baking powder
  8. 2 Ener-G-egg replacers**
Syrup
  1. 2 cups sugar
  2. 1 cup water
  3. 1 tsb lemon juice
Syrup preparation
  1. Prepare the syrup before the cake
  2. Place the sugar and water in a saucepan over the stove
  3. Stir over heat until sugar dissolves
  4. After the mixture boils, add lemon juice
  5. Boil for two minutes and remove from heat
Cake preparation
  1. With a stand mixer, whisk oil with sugar
  2. Add milk, egg replacer, vanilla
  3. Add flour, baking powder, and shredded coconut gradually incorporating them
  4. Coat a pan with oil and sprinkle with flour
  5. Pour cake in pan
  6. Turn oven on 350º
  7. Bake for 25-30 minutes
  8. Remove from oven
  9. Using a toothpick, poke holes in the cake and then pour the syrup
  10. Sprinkle shredded coconut on top of cake
  11. Leave it to cool and then enjoy!
Notes
  1. *You can use your own preference for milk
  2. **Two eggs can be used instead of the egg replacer
